Homemade Hot and Sour Soup

Last weekend, I was sick for about three days and had a craving for hot and sour soup. Unfortunately, my favorite Knorr hot and sour soup doesn’t seem to be available in the market now, so I opened up YouTube and looked for the recipe closest to how I remembered it. (I don’t eat pork so I avoided channels that had pork in their recipe.)

Anyway, there were some ingredients in Everyday Food’s YouTube channel that aren’t available where I’m from so I modified the recipe a bit but followed the rest of it (including soaking the fresh mushrooms).

6 pieces fresh shiitake mushrooms
2 tablespoons cornstarch
5 cups chicken broth
4 tablespoons soy sauce
1 teaspoon ground white pepper
3/4 cup canned bamboo shoots, rinsed and drained and cut into matchsticks
7 ounces soft tofu, cut into 1/2-inch cubes
A handful of spring onions, thinly sliced
3 tablespoons white vinegar
2 eggs, lightly beaten

Oh yeah, I’m a sucker for eggs so I always put 2 instead of one. Haha. Oh, and I was thinking of either going for leeks or spring onions in lieu of scallions but I’m not so sure if leeks are too huge.

It really hits the spot. At least for someone like me who has been missing this Chinese soup for years!
