This morning, I woke up with a very bad case of sore throat — as if a cheese grater had run repeatedly through it — and allergic rhinitis. I wanted to make something soothing. I hit the internet by checking out the best ways to relieve the kind of pain I was in and a few suggestions about chicken soup came up. This recipe is pretty simple. It had to be simple because my hands were shaking with hunger when I was making this.
What you need:
- 2 pieces chicken breast fillet, sliced into small chunks. Or you can request the supermarket personnel to have it shredded for this purpose.
- Garlic. A lot.
- Onion. Sliced thinly. I used red onion for this purpose.
- Celery stalk, sliced thinly
- Ginger, sliced thinly
Sauté garlic, onions and ginger in olive oil or coconut oil. When the onion turns translucent, add the chicken. Lower the heat to medium and when you see the chicken getting half-cooked, add 750mL water. Bring to boil. Add sliced celery stalks.
I almost threw away the celery leaves (out of habit) but noticed how green and leafy and beautiful they were. I got a little curious and did a quick search on the internet to find out if they are edible. Turns out that they’re just as rich in vitamin C and pack a stronger flavor than the stalks. I added them into the pan just as I was about to turn off the stove.
Like so. Haha.
Ok, this soup is for the sick so this would taste…healthy. The chicken itself will be flavorful because we sautéed it along with the spices, but the soup won’t be.
Now, some of you might want to add the following before adding the celery, just to give it a little bit more kick (though the ginger also gives this soup a kick):
Kikkoman soy sauce and Lorins fish sauce. Both sauces have massive sodium content and while you do need the sodium to help clear your throat and relieve nasal congestion, try not to be liberal with it.
This recipe also originally called for carrots, but I don’t like cooked carrots. I eat them raw. So yeah, I’m skipping them.
Lastly, I poured the soup into a bowlful of brown rice. This hit the spot perfectly and before I knew it, I was ready for restive sleep. I just woke up an hour ago and I’m feeling better now, obviously. Otherwise, I wouldn’t be blogging at all.
